Fine steaks and a real wine list aren’t supposed to be a Brooksville thing — that’s the whole premise Prime 88 Steakhouse opened on in 2022, betting that Hernando County didn’t need to drive to Tampa for a proper steakhouse night.
The menu runs classic: chicken at $31, pork chops at $35, steaks from $46 to $89, plus a wine list built to match rather than an afterthought. The dining room is intimate, but there’s also a bar and patio for a more relaxed version of the same food — and a dress code (no t-shirts, tennis shoes, flip-flops, or torn jeans) that signals this isn’t a casual sports-bar stop.
Regulars back that up. “Food and service were outstanding. Decor and ambiance were upscale and refreshing to experience for the area,” one Yelp reviewer wrote, echoing a pattern across hundreds of reviews — high marks for the French onion soup, the chicken marsala, and service described as attentive without being rushed, even close to closing time.
It’s not cheap, and at least one longtime regular has noted prices climbing over the past year. But for Hernando County date nights and special occasions, it’s carved out a lane nothing else nearby is really competing in.
